Being a certified organic restaurant,
(DE-ÖKO-006) we source our meat
and dairy produce exclusively from organic farming. In addition to that we pay close attention to selecting on regional foods( FARM TO TABLE): Mecklenburger Angus beef and free-range pork are obtained from Brandenburg, pasture calf
from Spreewald and Bioland fallow deer from Saarower Hügelland are of local provenance as well. We preferably manufacture fish and seafood from sustainable wild fisheries and organic farming. As an alternative to our meat and fish dishes guests can also pick from a variety of tasty vegan and vege- tarian choices. On that score it is hardly surprising that our main suppliers here all are certified organic producers, which can be found in the area around Berlin: Biolandhof Zielke, Terra Naturkost, Bio Kräuterei Oberhavel, Magdeburger Pilzmanufaktur and Nudelmanufaktur Märkische Schweiz.
We get our milk from the Spreewald region, cheese specialties of certified organic food traders arrive at our end from southern Germany and Italy.
Any pasta, apart from the stuffed varieties, can also be ordered gluten-free.
